Spaghetti with artichokes and ricotta cheese

Ingredients 320 g spaghetti
6 artichokes
1 garlic clove
60 g of hard ricotta cheese (shaved)
1 marjoram
4 extra virgin olive oil spoons
salt and pepper to taste
Description Mince garlic and put it in a pan with oil. Add artichokes cut in thin slices and cook them for 5 minutes, add some water, salt and pepper, cover all and go on cooking for 15 minutes (if necessary, you can add more water. ). While the sauce is cooking, bring a large pot of water, add salt (10 g for 1 liter of water)and wait untile it's boiling. Add spaghetti.
Drain spaghetti after 7-8 minutes of boiling, mix them with the sauce in the pan, add minced marjoran and cook for 2-3 minutes overhot flame. Distribute ricotta cheese over all and serve at once.
Additional Note This aromatic receipe, for 4 persons, is ready in half an hour. If you don't find hard ricotta cheese, you can use Parmigiano Reggiano cheese.
