Spaghetti with vegetable carbonara

Ingredients |
400 g spaghetti
300 g courgette
250 g carrots
120 g bacon (small cubes)
3 eggs
3 spoons of extra virgin olive oil
40 g Parmigiano Regiano cheese
salt and pepper to taste |

Description |
Wash and clean carrots and courgettes and cut them into very small pieces, and put in a pan with hot oil for 10 minutes under a medium fire, then add salt and bacon cubes and go on cooking until bacon has become brown. In a terrine, whisk eggs, add shaved Parmigiano Reggiano cheese and mix. Bring a large pot of water, add salt (10 g for 1 liter of water) and wait untile it's boiling. Add spaghetti. Drain spaghetti after 7-8 minutes of boiling, mix with carrots, courgettes and bacon, then put in a warm terrine where you have already put eggs, mix and add pepper. Serve at once. |
